Tomato Soup


Tomato 2000 gr
Onion 200 gr
Garlic 20 gr
Potato 400 gr
Zaatar 30 gr
Cream 10 cl
Tomato peeled 1000 gr
Butter 50 gr
Oil olive 10 cl
Sugar 20 gr
Bread croutons 150 gr

Preparation Method
  • Chop the onion.
  • Crush the garlic.
  • Cut the potato in medium size cubes.
  • Chop roughly the tomatoes.
  • Blitz the peeled tomato in the robot.
Cooking Method
  • Heat up the oil and the butter.
  • Sweat gently onion and garlic without giving any color.
  • Add the potato and cook for a few minutes.
  • Add the chopped tomato, the zaatar, the sugar and seasoning.
  • Cook for 5 minutes.
  • Pour the tomato "sauce" and complete with water.
  • Simmer the soup for 15 minutes.
  • Remove the zaatar.
  • Blitz and pass through a sieve.
Serving Method
  • Heat up the soup. Pour into the soup plate.
  • Drizzle with cream.
  • Serve croutons on the side in a ramekin.
