Mushroom Soup

Ingredients

Mushroom local 1000 gr
Wild mushrooms dry 100 gr
Onion 100 gr
Celery 50 gr
Leek white 50 gr
Garlic 10 gr
Potato 200 gr
Thyme bunch
Cream 20 cl
Butter 50 gr
Oil corn 5 cl

Preparation Method
  • Chop the onion, the celery and the leek.
  • Crush the garlic.
  • Cut the potato in medium size cubes.
  • Slice the mushrooms
  • Soak the wild mushrooms with little warm water. Remove from the water and pass through a mousseline. Keep the water.
Cooking Method
  • Heat up the oil and the butter.
  • Sweat gently onion, celery, leek and garlic without giving any color.
  • Add the sliced and soaked mushrooms.
  • Add the potato and the thyme and cook for a few minutes.
  • Pour the mushrooms stock and complete with water.
  • Simmer gently for about 30 minutes.
  • Remove the thyme.
  • Blitz in the robot.
  • Pass through a sieve.
Serving Method
  • Heat up the soup.
  • Stir in the cream.
  • Serve in the soup bowl.
